I love potatoes in any way, they are on my table most of the times and in my life a I have used hundreds of different recipes to bake potatoes, this Loaded Baked Potato is definitely my favorite one. 2 large potatoes (Idaho)
2 tbsp butter
2-3 tbsp caramelized onions (Approx 1/2 of a raw white onion)
2 tbsp chopped italian parsley
1 tbsp chopped rosemary
3-4 tbsp sliced chives
2-3 pieces of crispy bacon
1/4 cup shredded extra sharp cheddar cheese
Using a fork, gently poke holes on the big potatoes (prefered Idaho potatoes). Cote with some olive oil, a pinch of salt, a hand-full with chopped parsley and rosemary, and rub nicely the seasoned potatoes. Bake them in a oven for one hour at 375°F. When the potatoes are fork ready and slightly crisp, take them out from the oven and cut them open on half with a knife. To open the potatoes gently, push the ends inwards and use a fork to fluff their inside. Add a few pads of butter, rosemary, parsley and some Sharp Cheddar Cheese. Put them again in the oven for 3-4 minutes on 375°F. Remove from the oven when you see the cheese nice and melted on the top of the potatoes. You can top up as you prefer, maybe with some homemade bacon bits, caramelized onions,a few spoons of sour cream and some chopped chives.
