• 1 cup dry garbanzo beans
• 1/2 yellow onion, diced
• 1/2 cup chopped fresh flat-leaf parsley
• 4 cloves minced garlic
• 1 tablespoon all-purpose flour, or more as needed
• 2 teaspoons lemon juice
• 1 1/2 teaspoons salt, or to taste
• 1 teaspoon ground cumin
• 1/2 teaspoon ground coriander
• 1/4 teaspoon baking soda
• 1/8 teaspoon cayenne pepper oil for frying
In a large container add the garbanzo beans and cover it 3-4 fingers over it with cool water. Leave it thru the night ,or 12 to 24 hours and drain it after that. In food processor blend all the rest of the ingredients together : garbanzo beans,lemon juice, salt, cumin, onion, parsley, garlic, flour, coriander, cayenne pepper and baking soda. Scrub down the sides of the bowl when necessary. The mixture is ready when is finely ground and holds together when pressed, so you can form it. Transfer the mixture in a large bowl, cover it with plastic foil and place it in a refrigerator for 1-2 hours or until flavors blend.
Prepare a deep fryer or large saucepan adding oil and heat it to 350 F or 175 C. Make 12 portions out of your ready dough, dividing it equally and roll each into a ball, with greasy hands not to stick.
Cook the falafel balls about 5 minutes or until they are crispy and browned ,then place them on wire rack to drain the extra oil.
