• 4 russet potatoes, sliced into 1/4 inch slices
• 1 onion, sliced into rings
• salt and pepper to taste
• 3 tablespoons butter
• 3 tablespoons all-purpose flour
• 1/2 teaspoon salt
• 2 cups milk
• 1 1/2 cups shredded Cheddar cheese
Preheat your oven to 400 F (200 C). Take a casserole dish and butter up 1 quart of it.
One half of the potatoes lay down into the bottom of your prepared casserole dish. Add slices onion on top of the potatoes, and then top it up with the remaining potatoes. Season every layer to taste ,with salt and pepper . Melt butter on medium heat, in a medium-size saucepan and mix in the salt and flour, and then stir constantly for one minute with a whisk. Also stir in the 2 cups of milk and cook slowly until mixture has thickened. Put in cheese all at once then continue stirring about 30 to 60 seconds or until melted. Pour your cheese over the potatoes, and cover with aluminum foil.
Bake it for one on one and a half hours in a preheated oven.
