This Chicken Piccata recipe is one of my favorite, this is amazing restaurant favorite dish that can be done in no-time. Ingredients: (for 4 servings)
4 (6-ounce) skinless, boneless chicken breast halves
1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
3 Tbsp. butter
1/2 cup chicken broth
Juice from 1 lemon
2 Tbsp. capers
Cut your chicken breasts in 4 half’s. Pound the breasts with a meat mallet and sprinkle with salt and pepper. In a shallow bowl place flour and dip your chicken breasts in flour to coat both sides. In one skillet on high heat melt the butter, cook the chicken breasts for three to five minutes on each side until brown. Remove your chicken from the skillet when done, in the same pan add your chicken stock, capers and lemon juice. Boil the sauce until it reduces by one-third, then return the chicken breasts to the pan. With spoon pour sauce over the chicken. Best serve immediately when done, pour the remaining sauce over your chicken.
