Tacos have always been my sin, I just love them and these slow cooked Barbacoa Style Beef Tacos are special to me. They are really delicious and they are easy to make because most of the work is done by slow cooker. It does take a little while to get all the beef nicely browned but the browning is worth. 3-4 lb Beef Chuck Roast
4 Chipotles in Adobo Sauce – Chopped
5 Cloves Garlic – Chopped
1 Tbsp. Ground Cumin
3 tsp Oregano
1/4 tsp Ground Cloves
1/2 Cup Beef Broth
1/4 Cup Apple Cider Vinegar
1/4 Cup (fresh) Lime Juice
3 Bay Leaves
Flour/Corn Tortillas, Cheese, Sour Cream, Salsa, Guacamole, Rice, Black Beans
Cut the roast into six or seven chunks and remove the fat. Add salt and pepper. Heat the oil in your skillet and sear the beef chunks on all sides until they turn browned.Then transfer seared meat to slow cooker. Combine in a bowl your chopped chipotles, add cumin and garlic, cloves, oregano and beef broth, 1/4 lime juice and vinegar, and add additional salt and pepper by choice. Mix all well and then then pour the mixture over the beef in the slow cooker and add some bay leaves. Cook covers on low for 8 to 10 hours.
Remove the bay leaves and then remove the beef, shred beef. Return the beef to slow cooker to marinate for least 10 min.
