8oz. mozzarella cheese
1/4 cup flour
2 large eggs
2 Tbsp water
2 cups Italian Style breadcrumbs (see Crouton Crackerjacks recipe )
vegetable oil for frying
Cut the block of cheese in half and then in half again and then cut it into 5 equal sections. Each cheese stick should be approximately 1/4 x 1/4 x 3 in size. One 8oz block of cheese will make around 20 mozzarella sticks. Add your cheese sticks in flour and gently remove any excess flour. Whisk two eggs with water in a bowl and coat your sticks in the mixture. In bowl add your bread crumbs and coat the cheese sticks with it. Again remove any excess crumbs and set them aside. Repeat the two steps again by dipping the cheese sticks in the egg mixture again followed by dipping them in the bread crumbs. Freeze in a plate for at least 2 to 3 hours. This will helps to prevent cheese blowout during cooking procedure. Heat your oil to 350F. In small batches, fry the mozzarella sticks until they become golden brown. It will take less than one minute to be done. Drain the stick from oil and you are done.
